92 crownline 250 CR with 5.7 Merc and its RPM very high when I get up to about 15mph. Was told it could be coupler or gimball bearing. Anyone have any idea? Trying too get a second opinion to make sure i'm not getting ripped off.

prop hub if it is a pressed in one, engine coupler slipping or ready to fail, low/no gear oil in the upper unit trying to melt the gears

If this is a Merc A drive, and if the upper gear unit has failed, your seawater pump will not be working and/or pumping seawater.
After you have verified that the drive is OK, install your spare propeller and try it again.

If you end up taking the boat to a shop, ask for and be willing to pay for proper diagnostics up front.
Only upon receiving a work order quote, that refers to the diagnostics, do you authorize the repair.
Otherwise, you may as well give them a blank but signed check!

But doing this will also ruin your day. I dont have the SS prop because it was removed in pieces and was the size of a large orange

How about before you start looking into these advanced suggestion for causes, Maybe You should verify that your tachometer is actually reading correctly.

Smack your tach with your knuckles and see if it jumps around.

FYI If your mechanic suggested the cause may be the "gimbal bearing" get a new/better/more experienced mechanic.

If your RPM is too high, then stop smokin the wacky weed...

Drink instead, it makes the boat go faster....
