Heat sensor needed!

2004 Johnson 115 HP 2 stroke Bombardier J115PLSRC. I need a heat sensor. I can't find the right part number.
If they're no longer available can I disconnect/bypass it?
Is there a substitute?
Can I add one with a gauge directly to the block?
What would a local repair shop do?
Please help, thanks.

I'm not sure what page you refer to for part numbers. And no I didn't test it. It overheated a few weeks ago and went into slow mode. I replaced the impeller and thermostats. Now the HOT light comes on immediately when I turn the key. It starts, pees, and runs fine but stays in slow mode.

I'm not sure which one is bad. It overheated and the HOT light stays on now. Which one is most likely the problem? How can I test them? Thanks for your help.
