water temp variation on 4.3l MPI

I have a 2003 Mercruiser 4.3l MPI. My thermostat pluged up on me and now after I cleaned it out and replaced the stat the water temp seems to vary quiet a bit. Just wonering what is normal. I have a 162 deg. stat for the MPI. While running it climbs to just that and holds steady. Has never gone above. But... when I bring it back down to idle after crusing the temp drops to 110 to 1130. It will come back up to temp again. Question is? Is that normal. It is raw water system so the water coming in is the 50 deg range now? My main concern is getting fuel in the oil again. Seems to choke it's self when it runs too cold. Thanks for any help
 
The engine apparently has great waterflow to drop the temp from 160 F. while the stat stays opens after a run. 50 F. water seems to be the culprit.
 
I am hoping. The stat was bad when I bought the boat. So I have no base line to go by. Last fall I tried it and do not remember it dropping that drastically. But water temps were in the 70 F rang. I also have a new impeller installed. Thanks for the help. Just want to get all the bugs worked out.
