" Is it OK to use the water hose adapter to run the engine long enough to ensure my impeller assembly is back together correctly? Can you "over pressure" the lower unit using a water hose and does the engine get enough water?

You can use the adaptor, but you don't need full pressure. You can cause problems on certain engines if you run too long on full pressure. Of course, this depends on the water pressure in your area. The water pressure where I am is about 30 psi, which is far too high for comfort.
