Thermostat asked question

I am changing my thermostats on a 1995 evinrude 88 hp E88TSLEOC. This picture shows how I removed them with the cork gasket on valve body side of thermostat 2019-05-04 15.10.57.jpg

The book shows cork on power head side 2019-05-04 15.10.37.jpg

Which is right? The thermostats never look like they have been replaced.

Of course it is correct in the above photo.

It would serve no useful purpose on the other side of the thermostat flange

The picture was taken from my Clymer manual, and I have an older OMC manual that was for a 85 hp displayed the same. I thought it might have been a stupid question, but I'm not taking any chances. I'm going to assemble the way it came apart, like what Scalhoun506 posted. Thank you all.
