"I want to install a temp gauge on a '79 Johnson 85 hp. Is it possible, and if so, where does the sensor/sender go ??"
 
Yes you can buy a temp kit and

Yes you can buy a temp kit and the sensor sat on the outside of the port cyclinder head near the top...one of the 7/16 head cover plate bolts holds it in place but you need to scrape off the paint where the sensor touches the head
