looking for help finding a stainless or other T for flushing setup

I don't think you will find the one you want....more likely to find 1.25" and then use a reducer bushing for the 3/4" leg.

I would use bronze before copper, especially if it's installed below the waterline.

FWIW, Groco makes a valve fitting for flushing....look up their SSCV series
