Replace Control Harness

I have a 2003 SX200TXRB. Because insulation has worn through, exposing conductors, I need to replace the power and ground wires in the harness that runs from the engine to the switch panel. Since the harness wires are all taped together, the only way I see to replace the two wires is to either cut them at the connectors and pull new individual wires or pull out the whole harness, replace the wires and re-install the harness.
Since I want to do a lot of rewiring anyway, I’m thinking of putting in a new harness but I have no idea what that would cost or what I would order. The boat is a 21’ Sea Pro. Engine to Switch Panel is probably ~13’.
anyone know what I would need to order?

If I don’t replace the harness, how do I disconnect the current + and - wires from the connectors and what size are the terminal ends I’d need to put on the new wires?

Correction on this. I haven’t looked at the boat for a few days and don’t have access to it right now.
Not the engine harness. I mean the accessory harness that runs from the switch panel to the batteries and bilge pump, washdown pump etc.
