Overheating issue driving me nuts!

OK guys, here's the issue. I have 1977 Egg Harbor with 360's and the port engine overheats after running at high RPM. Engine will run perfect at 160 degrees at the dock and around the marina, but as soon as I throttle up for an extended period of time, upon throttling down, the engine will go up to 200+ degrees and dump about a gallon of coolant into the catch basin below the engine. It's doing this everytime I use the boat. Any suggestions?
 
get a radiator pres testor pump it to about 15 lbs or what ever cap says watch the gauge after you run it up if gauge starts to climb bad head gasket or crack?i asume you ck the thermostat?
 
Also, check the raw water plumbing for an air leak. Any air getting in before the raw water pump will do that.

I solved my Chrysler M360 overheating issue by removing the air pocket from the top-front end of the engine. Identify a cooling hose that is at the highest point on the engine and fill it with a 50-50 mixture of coolant-water until the level rises to the end of the hose. Cover the end of the hose as you reconnect it. For my engine, this hose was from the top-side of the centrifugal water pump to the exhaust riser. I removed the hose end connected to the exhaust riser so the additional fluid filled the air pocket at the water pump.
