Overheating alarm

My '01 mercury 225 optimax thru a constant alarm yesterday while flushing it after a long day 30 miles out. On the smartcheck gauge it read temp was at 180. Which is normally around 127. I immediately shut motor off. My buddy didn't turn waters picket wide open at the house.
I tried it again today and it got up to 160 and was rising. I shut it off. It had constant stream of water discharging out the back. What could be wrong? Impeller, water pump, water separator? Any info would be appreciated. Thanks
 
The 01 Opti's water channels are a little different than current models - were redesigned due to issues such as yours.

The tell-tale (pee-stream) is fed by the water tube that cools the compressor, not the heads, so a strong stream only means that you have water getting to the base of the motor, not necessarily getting to/through the heads.

If the tell-tale is strong I would look further "downstream" - thermostats and poppets would be my first order of business. If you don't know, can't remember when they were changed/serviced, that's definitely where I would start.

You mention running "30 miles out" - is this motor running in salt water? routinely flushed with fresh water after each outing??
