I have a 1973 boatel houseboat, it has a 318 chy w/ 270 volvo pinta out drive, the sea water pump is belt driven, checked the impellers and they are good, took the thermostate out and it still over heats, any ideas?

Look for an air leak before the raw water pump (it doesn't take much), a plugged inlet strainer, or a loose Vee belt.

Is this FWC or RWC? What temps are we looking at? Did you confirm that the engine is indeed overheating or are you simply going by what the temp gauge says? Many possibilities; Jeff's suggestions are all good ones, it may also be a problem at the stern drive end; fouled intake ports, or intake hose fitting on transom assembly if applicable, or water intake components in the drive.

we used the boat the day befor, it ran 130 ish it was 200 on the gage and motor was hot! ran fine the day before, manafolds were Hot!
