Newer style riser gaskets

So, I understand the newer procedure about sanding and using a copper sealant. But with relation to the gaskets themselves, does the "hump" that runs around them face up to the riser or down to the manifold? Opposite side of the "humps" are obviously little "valleys" created when pressed. Or does it even matter?

Yes, I should have called it a elbow, not riser. Thanks for confirming that gasket orientation does not matter. :)
