new 4.3L engine not cooling.

I have a 1990 rinker 206 4.3l engine. I got the boat and it ran great but had a cracked block and exhaust manifolds. I replaced the engine and manifolds and reused the old intake, water pump, etc. How hot should the exhust manifolds get? Should the y pipe get hot? And, what should the engine water temperature be at? Any help would be great, I have not ran the engine because I don't want to damage the new engine.
 
Ayuh,.... The manifolds, 'n risers can run up to 'bout 180° or so,... The y-pipe run much cooler,...

T-stat oughta be 160°,....

If there any doubts, change the raw water impeller in the lower unit,...

Haven't made it in the water yet just using a garden hose, I'll change the impeller and report back.
