my engine chokes out at high speed

i have a 85 hp evinrude and it starts fine and idles fine but when i get up on plane and at high speed it chokes out and goes down to idle speed again what can be the problem.

When you say "choking out", I take that as over-fueling. How do you know it's too much fuel, and not enough? Have you tried hitting the primer when it cuts-out?
