late 90's 4.3L cooling temp risers on muffs?

Ok, So long story, I had Machine shop build my 4.3L after I bought a boat with cracked block. It sat for 2-3 years builder said no problem, He used plenty of assembly lube. I replaced all the bellows on outdrive, h2o pump. flappers in exhaust. My brain isn't cooperating at the moment. I finally have it installed and started the other day, I cranked engine over with 4 plugs removed to get oil pressure before starting. Engine fired up, ran to verify oil pressure, Then shut off, as I had a gas leak, Second run a little longer, but had loud lifter knock. Hmmm. I took video and let it set for a few hrs. Went back noise gone, ran it longer to check water temp. gauge stays between 150-160, but concerned about riser temp 185 or so, Will muffs not move enough water? I popped hose off and there is flow, just not much. I did replace the riser gaskets, Had to order twice as when I separated the 3" extension there were 2 different ones used, between the riser and extension.
So My concern is the riser temp, I use IR gun to verify. Should I put motor in barrel of water or back into lake and check?
2. tach isn't working? Hmm what's up with that?
3. alarm is also not working, with key on engine off. I will be searching for fuses.
4. Boat is a Glastron 185 SE, Lots of work into polishing the crap off the hull, Looks sharp now, this is a fresh water lake boat..
 
If you are running the engine above idle, the muffs and hose usually won't keep the water pump impeller happy. the lake is always a safe option and the barrel will work if its large enough.

may sure the correct gaskets get inserted at the proper locations...using the wrongs gaskets has caused countless cooling issues.

The tach may just have not been reconnected...

same for the alarm - could also be one of the switches has failed...and there usually is NOT a fuse dedicated to the alarm circuit.

Are you on well or municpal water? seems like your flow is somewhat low. the 185 is not terribly concerning based on what you mention, as Mako says put it in the drink and see how it holds.
