Honda block and head resurfacing

I couldn't find anything when I did a search. It's clear that the Honda piston comes high up the into the cylinder - and there's relief for the valves cut into the piston. My question, how far can the head and block be cut down when resurfacing? Is there a shim kit available to maintain clearance? Thanks
