Counter-rotating props on a 22' Twin Vee

Recently put a lot of blood, sweat and tears into a 1998 22' Twin Vee with '98 70 HP Johnson (Suzuki) 4-strokes. The boat wants to steer right. It's easy to turn right but takes both hands to turn left. Both props rotate in the same direction. I've tried adjusting the trim tabs to counter the effect but am afraid to over adjust. How much is too much or counterproductive? The adjustment of about 15 degrees has little effect on the steering. Any fixes short of replacing one or both engines?

I'm a little disappointed in the top speed, as well. About 28 mph at 5000 rpm WOT. Is this about right? Operating on only one engine delivers about 5 mph @ 4000 rpm, WOT. Repairing a small fiberglass crack in the port stern deck revealed a plug in the 3/4" plywood below. Removed the plug and found water in the sponson. Installed a 6" inspection port and removed the foam to the hull to pump out water in both sponsons. Now they refill after rain- about 5" has been the worst case. There are 2 bulkheads in each sponson to make 6 compartments. I'm reluctant to install inspection ports forward as they would present trip hazards. Probably carrying an extra couple passengers worth of water weight around...

Also looking for the Check Engine warning code 3-1 that just showed up after a 7 hour trip to Woods Hole.
