Correct tool for temp

Need to verify if my 1995 225

Need to verify if my 1995 225 is operating at the correct temp.Are the infer red tools recommended or should I be using the thermomelt stiks. What are the shops using?
 
Just note that the temp is HIG

Just note that the temp is HIGHER at idle than full throtle! The best is to use a contact sensor in each head and either 2 displays or a togle switch.

What I am trying to achieve here is.. What is the correct tool for measuring the temp at the thermostat pockets located at the top of the heads.What method are the shops using A. Thermomelt stiks B. Temperature gun

"I always used contact sensors both in my workshop and for sea trials.
1: It gives a rather stable reading.
2: Not disturbed by water spray etc from test tank.
3: A bit more safer than a heat gun if running 50+ knots at sea!!!!!!!
When running more than one sensor, but only one instrument (Fluke) I used to calibrate them with an adjustable reostat before testing."
