'Mavis' has been running great, however the last three times out after 45 mins planing the temp jumps dramatically. I power off for about 15 mins and restart and at plane, temperature drops to 140 and is good for another hour or so.

What could be the cause of this?"

"First, you do not mention which engine/drive this is!
Even at that, nothing rings a bell for me that would cause this at a random interval like that..... Doesn't make a whole lot of sense to me....... Not unless you have a sea water pump suction hose leak that intermitantly or randomly breaches, then closes back up..... I even feel silly mentioning that!
But your sea water pump is going to work/or not work.
If a thermostat bleeds off, they don't recover.
Exhaust mans/risers sea water flow, to my knowledge, don't act like this either.

You may want to take one of the Infrared thermo guns out there with you next time, and see if it really is heating to those temps..... if not, you may have an issue with a sender or gauge.
I'd be more inclined to think of an issue with those, than a fluctuating temp like you describe.

Long shot here: is your ignition advancing system working well.... giving you a consistent spark advance?

I am inclined to think that I have sucked up debris and restricts waterflow through the block. Does this sound plausible?
Exaust manifolds are 1 year old and always have been in fresh water. Changed the impellar last year and is in good shape. The impellar that was changed out was totalled...could I have pieces in the system?

"Yes! And Yes! You need to find the missiing pieces if at all posible, IMO.

I'd also recommend that you pull your impeller and shelf it for the off season. "
