Temp gauge sender, oil pressure switch and over-temp alarm switches....... apples/oranges.
A temp gauge sender acts like a variable potentiometer, whereas an oil pressure or over-temp alarm switch is either open or closed.

If the switch is a single post, it would take the circuit to negative.
If it's a double post, it will act like most other switches, and will simply open or close a circuit.
Either may be a NO or a NC switch depending on the purpose of the switch.

If in doubt as to what the each does, see your OEM manual electrical section and schematic.

The audio warning horn (buzzer) is controlled by three switches. your basic description captures the idea. Specifically, the horn is powered thru the key, with the ignition switch in RUN or START. Normally, the horn will activate as the oil pressure switch will complete the circuit to ground. The oil pressure switch and the temp switch are typically provided with single point connections; their internal switch uses the case to complete the path to ground. The gear switch is normally the oddball and is supplied with two terminals. This means one of them is usually grounded.
The oil pressure switch comes in 2 or 6 psi openings and the temp switches activate between 200 and 230 deg F depending upon the version and year.
