Adjusting carbs/checking for lean fuel/air ratio

So I've finally fixed my air leak on my motor. Now that that's over, I'd like to focus on some other stuff I need to get fixed on it. I've got a handful of videos of the boat running, and I've noticed that it sounds like the engine is running leaner then it used to. It sounds kinda sick. Sounds a little more high pitched then what it should. I know something isn't right because if I put the hammer down then the engine bogs down and shuts off. If I speed up slowly then it runs fine. And at full throttle is when the engine sounds a little sick. I don't have but maybe 75 hours AT MOST on the powerhead. Ive got a video of when I had just finished the break in on the powerhead last year and it sounds like it should. And now it sounds sicker then it should. Also still can't figure out why the port side cylinders are 20 and 25 psi lower then the starboard cylinders. The numbers are 105 and 110 on the port. Starboard cylinders are both 130. All Bored at .004 oversize It's a reman powerhead that I just got put on last year. But I'm NEVER letting those techs touch my boat again that worked on it. Any advice? Messing with carbs feels overwhelming. I wonder if my lower compression on the port cylinders could be intertwined with why it sounds like it's running leaner then it used to.???
