383 mag stroker reving

Hello all,
Nice to meet you. I'm new to the forum and have a question. I have a fourwinns sundeck and just dropped a 383 mag stroker in her. She fires up fine and idles fine but when i give her throttle or shift into gear it starts reving up and then comes down. Any ideas would be great. Thank you for your time.

Myself and others ( the experts ) will need more info in order to help you. Engine year, carbed or fuel injected?

It's MPI and only a year old. It's a complete motor from Mercury. .......if i give it quick throttle it cuts out but if i ease into it, it will stay running and then will rev up and then cut out to the point of almost dying then rev up again. It does this over and over until i put it back in neutral and in neutral it runs fine.
