I believe you are referring to the overtemp switch. If so, contacts are closed unless pump motor gets too hot. Should close automatically when it cools.
 
No there is a set of points that are non adjustable inside the to cap of the trim motor along with a set of brushed that are non replaceable

I know, i couldn’t find any text or illustrations either, ill pull it apart again today and take a couple photos. Too look at them you dont see any carbon contacts on the tips and that was baffling. Makes sense now that they would open if overheated
 
There are a million 1988 125hp models. I grabbed 1 at random & don't see motor parts illustrated.
The whole reason for my question was that while i was working the air out of the the tilt trim system it just stopped working. I checked everything with a with a multi meter - replaced the trim relays and no issues except it appeared that it was the trim motor itself. I took that apart & cleaned the armature etc but “points or over heating thermoswitch” ill call it was closed so naturally i gave them a bit of a gap -i think now i just had a bad relay so ive got to open the trim motor back up and close the that gap.

It sounds like you were messing where you shouldn't have been a messin!!! The contact needs to be closed.

Motor current goes through a " bi-metallic strip "-----Too much current heats that strip.----It then bends to open the circuit.-----Protects the motor.
