2000 Yamaha 200hp HPDI Normal Operating Temperature

Looking to buy a used 200hp HPDI engine. What is the normal operating temperature of the cooling water. I plan on checking operating temperature of each cylinder with laser temp recorder. Also planning on checking condition of oil, lower unit gear oil, and condition of spark plugs. I don't have time to do a compression test. I do plan on putting engine through a sea trial. Any other suggestions?

Thermostats open at 165 degrees. There is no oil to check, it's a two stroke. And I would definitely do a compression/leak down test, It's more important than the sea trial.
