1999 Merc Optimax alarm issues

Hi I have a 99 mercury OptiMaxx 150 hp last time I took it out it went into guardian mode 4 beeps every 2 minutes/ water overheat light is on, I changed out the impeller and both thermostats Fuel water separator water temperature sensor on the starboard side the little sensor on the port side and I believe the air sensor in the front of the motor, light still comes on and beeps do too. Water psi is about 3 at idle and at least on muffs 16 at 2800 rpm, Any help getting this light to go away would be greatly appreciated

If there is any way to bypass the whole system I would also like to know that just in case it happens again 10 miles from the ramp
