1993 OMC Quiet Rider (Basically 115 Evinrude V4) Chasing and chasing issues

Long time reader, first time poster!

Had this boat for a couple of years, its given me more trouble than its worth, but I kind of like working on it and I have learned a whole ton.

Had it working great earlier in the summer. The lake we have it at has dropped 5 feet over the past few years, so you have to idle in gear for a solid 15 20 minutes to get to deep enough water. One trip out it just stalled and died as soon as I added throttle. Put putted my way back to the marina. The next day, same thing, except I could get it started again, so we had to be towed back to the marina. Toubleshooting I did those couple days was switch to a potable tank, pump the primer ball when stalling, and activate the solenoid primer when it was stalling, none of that helped.

I basically rebuilt the fuel system last year, so I have convinced myself that it is an ignition issue. I replaced the power pack, and all other components are testing okay, I bought some cheap coils off of Amazon to throw in the mix for troubleshooting and they test kind of weird but thats okay. I bought a used stator off ebay to throw into the mix as well. Ive pulled off the carbs and given them a once over, I'm going to test the fuel pump next, as well as have a look at the pulse fitting to see if its restricted or not. Bulb spark testers are all flashing, a cheapo Amazon gap tester was intermittently jumping a 7\16 gap. But I wasn't convinced that it was the best test. This was all done in the garage cold cranking on a remote starter

I did a compression test before the season so I'm probably due for another one.

2 part question for the experts here

1) Any ideas? I feel like i'm just chasing a ghost here.

2) I'm trying to convince myself that its a not so obvious ignition issue that doesn't present itself when cold, but when the components are warm theyre not so happy. Of the 2 stators I have, one has an Ohm reading of 405ohms (this is the one off ebay) my stator has an ohm reading 560ohms. Spec from the manual is 480 +-50ohms which stator would you use?

I would be taking the cylinder head off.----Easy on a fresh water motor.----Just 10 bolts.----Numbers should be 125 PSI +-----Head gasket is much cheaper than a stator and other parts you might guess to try !!
