Bad Mechanic

I know a little about motors in general but iv never worked on a boat motor...It will start and run below 1/4 throttle fine but when you open it up wide open it will launch and run perfect for about 30 seconds then it almost dies. It accelerates great and will run about 40mph (normal top speed for the boat) then it just dies. I have rebuilt the fuel pump, cleaned the carbs and put new fuel line on it and it is still doing the same thing so I'm starting to think its not a fuel problem what do you guys think? Any help will be greatly appreciated!
