Which of the thermostats do you have in it. The white with the 3-fins or the black with a cone only?

Have you verified the actual temp with an IR gun? Should read around 140-150F at the thermostat inlet at idle.
Are you running on muffs or in a barrel? To get correct reading you need to either have the boat launched or run with lower unit in a barrel with water level min 2-3" above split between gearcase and leg.

No IR gun and only on muffs since thermostat change. Hope to get it in the water today if the wind lays.
