Could be alignment of shifter that's out? Cables could be stretched too.
Make sure that the gears and shift shaft has been aligned correctly in lower unit.
Establish that there's no play in cable linkages between control box and motor.
Has control box been opened? Maybe the cams are worn or out of synch?
Next time it jumpes out of gear, kill motor with IGN SW. Don't touch throttle, look under hood to see that you have full travel of cable for linkage.
That's where I'd start looking.
