1988 Evinrude E200STLCCM Overheating Alarm ?

Hello, I`m a newbe with a question about the XP200 cooling system. The temp. alarm started going off on my boat when I started it using earmuffs after about a half a minute. I replaced the water pump and both thermostats. I found water in the oil tank and removed that.Now it will run for maybe a minute and a half and the alarm go`s off again. Is it because I`m using the earmuffs? and not having the motor in the water or could it be something else?

I don't use muffs because I get inconsistent results. Sometimes it runs cool, sometimes it overheats. Same muffs, same engine. I think the muffs introduce air into the water pickup, and a bubble forms in the top of the block, and it overheats.
I now use a tank.
