1982 Johnson 75Hp dies randomly after 3/4 throttle

Hey guys. So I have a 1982 Johnson 75 J75TLCNB that I rebuilt myself with all new everything; pistons, rings, wrist pins, bearings, seals, 1 new con rod, new spark plugs, carbs were cleaned and rebuild with new gaskets, fuel pump was recently rebuilt, etc (except the thermostat which tested fine in boiling water). I am continuing to break it in and im at the point now where I can go 3/4 throttle- wide open. The boat gets on plane fine and then I sit at 3/4 throttle for about 2-5 minutes and then the motor just dies out of nowhere as if the ignition was turned off. After it dies the starter doesn't click up until after letting it sit for 1-2 minutes. Then it proceeds on as normal. Then dies again after another 2-5 minutes on plane and keeps repeating. This is when the motor is hot. I am using brand new fuel and oil at 25:1 premix as per the manual and I know I rebuild the powerhead correctly. Any ideas on why it dies?

You have not mentioned a new water pump impeller here.----Have you taken the starter apart for inspection ?----If it shutts off like you turn the ignition off you need to inspect wiring and ignition components.
 
I suggest a new impeller and some maintenance on the poppit valves.------Or test run with another tank and hose.----Or look for broken wires somewhere on the motor ( not easy to do ) as wires may be intermittent.
