115 Optimax loses power when accelerating

Hi all, I've got a 2007 model 115ph Optimax that has started playing up. Once it is up to operating temperature, it is losing all power when accelerating from idle. If I feed in the throttle slowly I can get it up onto the plane and it will run as normal. But if I apply throttle at a normal amount (or more) it starts to increase revs then just drops right out. It has never cut out and does not run rough at all - sounds smooth and normal regardless. It had done this once or twice randomly in the past but on the last trip out it was playing up every time I accelerated from idle. I've had it into the local Mercury workshop and they found no faults on the diagnostics. They did a bunch of tests and the only thing that failed was the spark plugs which they replaced. Back on the water the following day and I tested it out multiple times as soon as we left the marina with no problem. After a 10 minute cruise, I pulled back to idle for a couple of minutes, then tried to throttle up again and the it again lost all power/revs. Turned around to head back in and again managed to get it up to speed by accelerating very slowly. Im suspecting fuel system but am a little stumped - as is the mechanic. Any help would be greatly appreciated. Thanks.
 
Did the shop test the air compressor output.--Replaced all filters ?--Water pump impeller changed every 5 years ?-----And post the compression test results.----The actual values.

Thanks for your reply. Their receipt says checked air rail pressure, injectors, fuel pressures and spark plugs. All ok except plugs. I've had the engine serviced every year with the water pump impeller changed each time. I did notice they hadn't changed the transom mounted fuel filter last service so have asked them to replace that this time. No mention of a compression test...
