Trouble with the old 1980 115 blueband inline 6

Hi guys

I am at a complete loss and I'm hopeing that someone on here might be able to shed some light for me as my local outboard mechanics are bloody useless and are starting to empty my pockets.

The back story:
I recently got given my uncle's old Nova craft with a mercury 115 blueband on the back.
About 5 years ago my uncle moved into town and we did some work to get the boat up and going, we did like 3 trips in the boat and then it sat in his yard for the next 4.5 years. Then it was gifted to me..

The beast:
1980 mercury blueband 115hp inline 6 outboard

The problem:
So the motor seems to run fine at idle and will run fine with just throtle ingaged but no gear box engaged. So under load the boat tries to get up on the plain and will rev out to about 5800rpm but after 5-10 seconds it starts to die and will slowly drop back to 3600ish rpm and then just stay there.

The work thats been done:
Tank has been flushed
Fuel lines replaced
Fuel filter replaced
Breatherline replaced
All hose clamps replaced
All three carbies have had a kit done
Fuel pump has had a kit put through it
Replaced one of the two CDI packs (the other ones seems to be fine)
Replaced stator
Replaced trigger
Gearbox has been serviced
Waterpump has been replaced
Compression test
Spark test

As I said it runs perfectly fine when it's not under load or idling along at low rpm in gear but as soon as you give it the boot it just dies down to that 3600ish rpm and sits there.

Please help hahaha

Okay. (I hope you also changed the impeller?) You need to isolate the problem with a WOT run followed by a plug inspection. Do NOT let it idle--blast her good and shut it right down and off.
