"Anyone have any tips to replace shutters in a 1989 Mercruiser 5.0LX
I know where they are, but am unable to get the hose off.
Any help would be appreciated."

"If the hoses are original they are likely very stiff from age. You may have to remove the riser/elbows from the manifolds to get it apart, like Scott said. No big deal but make sure you have a set of new gaskets handy. You may also want to replace the exhaust coupler hoses while you are at it, and avoid the possibility of one failing a long way from home.
