"My old BF100 carburetor has the Main Jet #88 and the Service Manual just says that is "Standard", no mention of other sizes, or when to use them.

Parts manual lists five other sizes from #72 to #85 and one would assume that the "Standard" #88 would be the largest and provide the *richest* fuel mixture.

Is there a 'rule' like at a 4,000' elevation, 'use a #78' or something?

I know that on a cold day, at sea level, you would need to have the richest fuel mixture.

My question would be 'if you only operate on hot weather days at sea level', would you be better off for performance as well as economy, to use a #85 or even a #82 Main Jet?

At sea level on a hot day, the air density would easily be as 'thin' as the air density at a high altitude lake, when a 'leaner' Main Jet would be in order, for maximum power as well as fuel economy.
