" I have no idea as far as a bolt on transom.. I think it would be hard to make something like that fit many boats. Assuming this is fiberglass (aluminum would be even easier), you could patch up the hole with plywood & epoxy and then reinforce with plywood/epoxy or aluminum. Once the hole is patched up, custom build an engine mount that takes the engine mounting off the transom (so that the outboard can tilt) and/or use a manual jack plate as part of or as an engine mount. I think you'll need a pretty long engine mount though, a good 2 ft at least.. interesting project though, I've though about trying it myself. Let me know how it goes.

"Last winter I converted an 18 ft. aluminum boat from and I/O to an outboard mounted on a transom bracket. The boat operated extremely well with a 115 HP Johnson.

I had to replace the transom plywood. It was partially rotted. I replaced 1-1/2 thick plywood with 2' thick coated and laminated with epoxy.

I purchased the bracket from D & D Marine in Waveland MS.
