79 Chrysler 7.5 hp White smoke and loss of power

Well I got my little project motor running and took it for a spin yesterday. Ran good for about 20 mins then a plume of white smoke came out and it lost the power needed to get up on plane in my little 12 foot Jon boat.
What would cause this? Water still pumping and no signs of overheating.
 
Pull the plugs?
Sounds like you lost a cylinder?
Compression test.
I pulled the plugs and and looked over everything. No sign of any problems. Took it out yesterday and ran it. I trimmed the motor up a bit and shifted some weight forward in the boat. It seems to have fixed the problem of it bogging down. I still think I can get more power out of this motor, full throttle doesn't feel like full throttle. Wish I knew more about adjusting carburetors. Reading up as much as I can.
 
The only adjustment on your carb is the air/fuel mixture screw.
It's for making it idle better.
Start at 1 1/2 turn out. start the motor and see if it idles smooth???
Then 1/8th turn in and wait 10seconds. If it helps the idle then try another 1/8th turn.
Don't go any less than 3/4 turn out.
That doesn't help? Then start at 1 1/2 turn out. then OUT 1/8th turn. wait 10 seconds.
Repeat until it smooths out. Then do it in the water in gear motor warm.
Need more power??? Get a bigger motor.
