Would appreciate instruction on changing impeller. Also there is a large screw going through the middle chamber of the lower unit. Does removing that release the exhaust / propeller section of the lower unit?

Have not worked on one of those in a long time.-------You might be able to find a manual online.--search for " johnson outboard manual 1922 to 1964 " something might show up.
 
Disconnect the neutral clutch cable at the bottom end of the neutral shift lever. Remove the S-curved copper cable tube. DRAIN the oil. Remove the four bolts holding the gearcase on and drop the gearcase down and away. Pull the 1/4" plate from the upper housing. The water pump will come with it.
 
Just as you said, But, The drive shaft and all came out but it appears I need to remove the clutch-shock assembly in order for the impeller to slide off and replace. Is there a trick to getting that assembly to come off? Thanks again.
 
There is nothing holding it on except perhaps a bit of a burr or something. It should slide right off. Might need a bit of persuasion.....
 
Vintageoutboard.com shows to have the impeller, if they are out you can also make one to fit. Get one for a 5.5 Johnson/Evinrude and ream out the driveshaft hole, go slow and don't over do it. Enjoy, those are neat old motors.
