1996 Sea Rayder F16 120 hp Merc Sportjet (FORCE Powerhead) Running Issue

Hopefully someone has an idea of what is going on with an issue I have been having with a 1996 Sea Rayder F16 with a 120 hp Merc Sportjet (FORCE Powerhead). Any help would be greatly appreciated. The engine has 150 hours on it. It starts up and will run at 2000 - 3000 rps no issues for 1-2 hours. Engine runs well, no vibrations, skips or any awkward sounds are coming from it. When I slow down to headway/idol speed after cruising the engine stalls and will not start. Compression is good. Carbs were professionally rebuilt and tuned. I use the Star tron Enzyme in the fuel. At a loss as to why after running for an extended period of time, the engine will suddenly stall at headway speed. Thank you for any insights that could help me find this root cause.

Sounds like the fuel system, pump and primer(choke) could be a problem.
Rebuild the fuel pump(fairly easy)test the primer.

Testing the primer: start the motor, pull the hose from the primer to the carb/float bowl off and see if it pumps gas??
It should only pump gas when you push the key in. Each push should pump gas.
