I had the same thing happen on my 5.0 MPI. I replaced the check valve assembly in back of the fuel pump. Problem went away. I think it stops hot engine water from backing up into the fuel pump.

With drive trimmed up and looking from the bottom up and side to side, do they tend to break more on the ^ crease or the V crease? Where would be the telltale place to look?
Typically when dealing with I/Os it is not uncommon to have to take the boat apart to gain access. Is it not possible to remove bulk heads/panels next to the engine to gain access?
On my 2002 5.0 MPI raw water cooled I used Permatex High Tack to keep the metal gaskets steady, torqued them down, got the engine hot and retorqued them. 200 hours later no issues.
I use a homemade outdrive cart, 2x4s on a furniture mover, so the uprights are not angled so the prop has to come off. I slide the spline washer onto the shaft and attach a plumber wrench (heavy) to hold the shaft CCW. Maybe Bondo's way is easier.
