Motor starts and idles fine. When I try to accelerate it stalls unless I hit the choke. Then it will take off and run fine. The powerhead is rebuilt. I have rebuilt and cleaned the carbs. Do I need to increase the size of the main jet orifices? If so how much?

I have already taken the carbs apart, cleaned everything. Soaked and blew out all the passageways. Replaced all gaskets, needle and seat. Removed, and cleaned main jet orifices. I just remember reading somewhere that when you rebuild a powerhead and bore cylinders oversize you may need to increase the main jet size. I can't find the place where I read it. It just doesn't seem to get enough gas to accelerate when I initially put the boat in gear. Hitting the choke squirts enough gas in to get the thing going and then once I'm moving it is no longer starving for gas.
