Running your motor at Operating temp?

Hey guys I have heard a few of you say that you use more gas when you run your engines cool. Why is that on a carb engine and what are the other benefits of running it at operating temp and not taking the thermostat out? Thanks
 
A warmer engine allows for more efficient fuel atomization and combustion. This results in more powerful combustion and less fuel consumption.

Jeff will also point out that warmer oil temperature allows for elimination of moisture build-up in the oil. Moisture in the oil can result in sludge accumulation and the formation of acids that corrode internal engine components.
