antifreeze on cylinders

I bought a 1981 Glasply with a 165 inline GM FWC. I was told he bought the Boat with a new rebuilt long block. Sitting 10 years and never in the water since he bought it. I took it out and it seemed to run fairly good. I could feel a slight stutter but not serious.
Ran it around 10 minutes, RPM's max at 3500. Fished for a bit. Then ran engine longer and ran RPMs up and down. Noticed a burning smell and temperature climbing. slowed down and started to cool. close to dock, went in.
pulled up and seemed no problems no smell no unusual smoke. found bilge with all my antifreeze dumped. Checked hose fitting, they were very loose.
Left and came back next day with antifreeze. took the whole gallon. started hard but ran with smelly white smoke. Took plugs out for compression check. cylinders were full of antifreeze. Compression on all cylinders.
Can it be a cracked manifold or a bad gasket on manifold or should i look someplace different?
I sold the 1977 Glasply,, i could not change signature yet ??
