How difficult is it to replace throttle cables?

Honda BF250 (2013 XXA model)

I suppose first I need to measure the existing ones to ensure I get the right length.

I have never done a replacement before. 8 years on my current ones but they are feeling a lot stiffer and more difficult to make small adjustments.
 
Went out today in some pretty tough conditions - 2-4 footers, short chop. Honestly I shouldn't have gone out. But the boat and Honda performed fine. I still think the throttle needs new cables after 8 years and 1000+ hours of hard use. I think I will wait till winter to do this, which may necessitate replacing the remote control/throttle controller as well.
