What should the operating temp be for a 272 Dearborn Interceptor marine engine

I have a 1959 Century Resorter wood boat with a 272 (or maybe 292) Dearborn Interceptor V8. I cannot get it to run warmer than about 125 degrees F. I would think it should run about 160-180. My thermostats both start opening around 125 degrees. I’m thinking I need new thermostats. The thermostat OD is 40 mm so I’m having one hell of a time finding any. Does anyone have any thought on this subject? Much thanks.
 
General rule of thumb:

Raw Water Cooled engine in river/lake water........... 160* thermostat.
Raw Water Cooled engine in Ocean water.......... 140* thermostat as to minimize salt water crystallization.
Closed Cooling System engine in any water........ 160* thermostat.

I don't know what to say about the difficulty in finding a 40 mm stat.

there are a posts in the archive on getting a S/S stat from Napa & then grinding it to fit...

The other option would be to contact one of the Y-block restorer spe******ts.....the internet will show you that path...
