Would a different prop help?

I have a 6hp MFS on a 110 pound 9 ft dinghy. By myself (190 pounds) if flies. When I add a passenger it is significantly slower. I wonder if this is just the result of being under powered or whether I could improve performance with two people with a prop having a pitch more suitable for the increased weight. The prop is the original and marked 7.8 x 8.

Depends. You are likely at the limits for your weight/drag/power combination. However, check the WOT RPM with a tach; If it is significantly below 5000, reduce pitch to get the motor up to around 6000. Figure an inch of pitch for every 3 or 4 hundred RPM.
