I run my trim all the way up and down with the trim switch. Why is there also a "tilt" switch ? ( currently tilt sw is disabled )

So the trim switch only works within the "trim" range (?? degrees)
Correct!
and to bring the outdrive up beyond that would require you to use the "Tilt' switch ??
Correct!
I would assume this would be set up that way to prevent drive from being raised too far up with engine running ??
It has more to do with staying within the trim range while the hull is planing.
What about "beach" mode ? is that part of trim or tilt ?
I'm not familiar with "beach" mode..... but will assume that it is in the tilt-out range.
When not in use and/or on the trailer, keep the drive fully down and aiming straight ahead. This will help extend the life of your drive shaft bellows.
