How to get out temperature sensor?

Hi. I have a 1998 Evinrude 2 stroke 25hp that needs the temperature sensor switch replacement. The wire that leads to it appears to go in into the cylinder head cover or maybe its just a water jacket cover but whats the method to change it? Do I have to remove that cover or can it be pried out and the new one popped in? Thanks
 
A rubber grommet holds it in why are you replacing it? It is called a snap disk and is not considered a control. If it is faulty it is because the engine has been overheating they wear out rather quickly. Point being you need to address that as well.
