Temp gauge reading high

I have a 2009 bennington 2575 rcw with a mercruiser 350 mag mpi with Bravo 3 outdrive. The temp gauge is reading 200 degrees. I have replaced the impeller, thermostat and temp sender. I grounded the wire for the temp gauge and it goes to max temp. Shot with a ir temp gun and it reads 165 when engine is hot but thermostat reads 200 still. I take it off the temp sender and it goes back to 165 and raises again to 200. Not sure what else to do. Getting good water flow, no blockage. Is it possible that I got the wrong temp sender or the connection is bad or something? I'm stuck at this point, the alarm works but its not going off seeing that it's truly at 165 degrees and not overheating. I guess it's just a little bothersome for me to see, really want it to read true. Any advice on this would be appreciated. Thanks.
