Should I add a 3rd house bank or dedicate one bat to start and one for house?

Hello I have a new to me 87 tiara 27' cruiser fishing boat with twin 5.7 mercruisers

my objective is to set up my electrics so I can overnight on the hook while running interior lights, fans, a refrigerator and use 110v outlets to charge phones radios.

my current set up is:
twin stock 65 amp alternators (12v)
twin single 12 v starting batteries
shore power charger (1987 technology)
two on-off battery switches (no dual or 2 position)
an emergency momentary remote parallel switch
all house dc components run on starboard bat
fridge is ac/dc
windlass runs off port bat with separate 3rd on/off battery switch

Id like to be able to leave a house battery on overnight to run the fridge and fans and lights an occasionally the pump for the freshwater tank and sink

I'd like to isolate house battery from starting battery so I still have fresh fully charged starting power in the morning

would like a modern charger/inverter to run outlets (suggestions on brand, sine wave?)

questions:
1 do fridges work more efficiently on dc or inverted ac?
2 should I run ach or battery isolator
3 do I need two separate starting batteries and a 3rd house battery or can I get two larger batteries and have one house and one start?
4 what type of batteries ?... Cost vs capabilities
A. Two 6v deep cycle batteries serialized to = 12 volt? (Per bank)
B. One big 12 volt? (Per bank)
C. Traditional lead acid vs agm/other?


Im leaning toward getting a two alt, 3 bat isolator so both alternators can charge all / any batteries as needed
also thinking 3 batteries with switches so that I can switch any bat to either motor in an emergency
and adding an inverter/charger with 3 outputs

is my logic sound? Thoughts and suggestions welcomed!
